Natural food colours are pigments or substances obtained from natural sources that impart colour when they are added to food or drink. They come in many different types and forms; water or oil soluble types; liquid, powder, gel, and paste forms. Both under this title, “Colouring Foodstuff” (without E numbers) produced by the extraction of fruits and vegetables and “Natural Food Colours” are used in commercial food production.
Anthocyanin, Beetroot, Chlorophyll, Beta Carotene, Paprika, Turmeric (Curcumin), Safflower, Lutein and Lycopene are some examples used in fields like confectionery, beverages, dairy products, industrial fats, fruit fillings, etc.
